EXTERIOR: Orange-yellow color, rough, irregular crust, covered by the protective food film indor (aqueous solution co-polymer of polyvinyl acetate).
INTERIOR: Semi-soft, unpressed paste, with irregular eyes, dissimilar. Irregular texture resulting from the presence of chillies. Offers some resistance to cutting.

AROMA: Aroma Latin, with notes roasted, bittersweet.
PALADAR: Slightly lactic, spicy, fibrous, easily adherent and present on the palate. Cylindrical shape with slight lateral bulging and sharp edges.
